Why should I buy the LBM2?
This dry heat bain marie from Lincat commercial catering equipment is a stylish and compact counter top appliance constructed from high grade stainless steel; it’s ideal for front of house use in hot buffet lines and self service counters. The LBM2, part of the Lynx 400 range, is a plug in unit and will hold pre cooked foods at serving temperature for up to 2 hours without loss of texture or flavour. The bain marie is supplied with 4 x 100mm deep 1/4size gastronorm “Super Pan II” stainless steel containers, together with lids. Each GN container has a capacity of 2.75 litres, or 5 pints.
This is a dry heat bain marie with an adjustable heat control for added versatility. Dry heat doesn’t use a heated water bath to retain the temperature of the foods. Unlike wet heat models, the air around the dry heat container is warmed directly, so heat up from cold can be quicker. And, speaking practically, no labour is wasted changing and draining the water from time to time. Ultimately, it’s down to personal experience; although very delicate butter sauces such as Béarnaise and Hollandaise seem to perform better in wet heat bains marie. Lincat offer a wide range of dry and wet heat bains marie, both types available either with GN dishes or round pots.
