Why should I buy the PRO16DR?

The Foster Pro16DR is designed for use in busy pizzerias, delicatessens, patisseries and bakeries. This 450 litre refrigerated dough retarder preparation counter has a capacity of 16 trays with dimensions of 30” x 18” as standard - 60cm x 40cm trays are available as options. This 2 door unit helps you overcome the natural peaks and troughs of demand associated with commercial bakeries and plan ahead, preparing large batches to fit in with individual production schedule requirements.

The refrigerated storage and retarding of dough has 2 significant benefits: it allows baking to be done at a preferable, more convenient time for the caterer and it deepens the taste of baked food products, improving flavour and giving crusts a darker colour.

This state of the art appliance has a host of useful features including variable retarding temperature options between -4°C and +4°C and an automatic humidity control which prevents skinning of the dough and weight loss. The advanced air flow system ensures that temperature and humidity levels are uniform throughout the cabinet for perfect, consistent results every time. The high quality stainless steel construction and efficient insulation of the unit mean that it will perform optimally in ambient temperatures up to 43°C.

The external dimensions of this chilled tray counter are 865mm (h) x 1810mm (w) x 916mm (d) and it has a net weight of 123 kilos; grade 304 stainless steel is used throughout for an attractive and robust finish with a surface that’s food safe, hygienic and easy to wipe clean. Lockable 80mm castors are fitted as standard so the counter can be easily moved from one area of your premises to another if required. Extra pairs of stainless steel tray slides are available. This unit is plug in and requires a 13A socket to run; a 13A plug and supply cord are ready fitted.

The integral refrigeration is forced air with the compressor located at the left of the unit; the refrigerant used is R134a, which is ozone friendly and has excellent thermodynamic properties.

This appliance is part of Foster’s outstanding range of specialist catering equipment - other products include modular dough retarder provers for large trolley or rack catering operations, 20 and 40 tray storage refrigerators and “bake off” freezers.
