Salamander grills are versatile, compact, general purpose grilling units that are common in most types of catering business in the UK. They're incredibly easy to use, and are available in natural gas, propane gas, electric or electric adjustable (models where the distance between the grill unit and the base can be altered to handle different foods).
Salamander grills heat from above and have a removable grilling pan, either a cast iron grillplate or a wire rack. Some models come with two separately controllable heat zones, and grilling pan position can be adjusted to bring food closer to the heat source if required. Many salamander grills can be mounted at head height on shelving or racking to make space for other equipment, and most operators prefer them at this height for ease of use.
