A sous vide is a waterbath or steam cooker intended for low temperature, slow cooking of foods sealed in watertight bags. Sous vides must allow very accurate temperature control to ensure the inside of food is cooked without the outside being overdone. Sous vide cooked foods, done properly, have the most delicate flavours and textures and are popular in high end restaurants and hotels.
